Dr. Adrienne Foos, associate professor and chair of the Department of Marketing, published two peer-reviewed case studies in November in the Journal of Business Cases and Applications. Co-authored with Senior Lecturer Kristen Ryan, “Got Bugs? Pioneering the Future of Sustainable Protein Sources” examines the market viability and sustainability challenges of a local insect protein producer. The second case, “Sweet Freedom: Maple Sugar as a Moral Market in the Early Republic,” co-authored with Mercyhurst University professors Dr. Benjamin Scharff and Dr. Kristofer Gossett, explores the rise and fall of the 1790s maple sugar industry as an early experiment in ethical consumption, offering lessons for today’s moral enterprises.
In addition, Foos was interviewed and featured as an expert in Le Monde, a leading international newspaper, in an article examining the evolving “crunchy mom” subculture in the United States. The piece, titled “They cook organic, distrust science and oppose vaccines: America’s ‘crunchy moms’ shift toward Trump,” explores how a lifestyle movement centered on holistic health, organic consumption and alternative parenting has intersected with broader cultural and political shifts. Foos contributed scholarly analysis on the historical roots, consumer ideologies, and internal tensions of the movement, providing international audiences with academic context for understanding its growing influence on public discourse around health, consumer culture and political identity.
